A newer restuarant on the scene for 2005 in Cortona is Ristorante Il Cacciatore, located just off of Piazza Signorelli and a few doors down Via Roma. They advertise themselves as a typical Umbrian/Tuscan kitchen and their dishes are all a little different and quite good. Downstairs where you walk in, they have a small area for dining, very normal, but upstairs they have a large grand dining room area with very lively tablecloths and room decor. They have quite a few fish dishes; the few I have tried were fantastic. Their pasta dishes are all great and the menu continually changes. Last time I had a delicious frutta di mare pasta that had the most tender shrimp and calamari I have ever had. We often ask them for what they recommend, and depending on how many people you have in your party, they can prepare dishes so everyone can try a taste. They definately are not a rustic Tuscan kitchen but all the dishes I have tried are very good.
